¾ cup cornmeal
¾ cup oat flour
½ t salt
2 t Baking Powder
½ cup coconut milk
¼ cup applesauce
2 T honey
2 T water (as needed)
Directions
- Mix together in a mixing bowl: cornmeal, flour salt, and baking powder
- Stir together the coconut milk, applesauce, and honey in measuring cup. Add water to make 1 cup of mixture
- Combine wet and dry ingredients, stirring briskly until smooth. Pour into an 8” by 8” pan. Bake at 375F for 20-25 minutes.
