Snack food (January 2017)

We don't encourage snacking between meals, but sometimes it's nice to have "snack food" for a light supper. Try these heart healthy "snack like" foods for a light evening meal.

Vegan Tofu Sticks

Apple Nachos

3 crispy and slightly tart apples (
1 tsp lemon juice
3 Tbs creamy natural peanut butter
1/4 cup sliced almonds
1/4 cup pecans
1/4 cup flaked unsweetened coconut
1/4 cup vegan carob chips
Directions
1.      Thinly slice apples
2.      Sprits apples with lemon juice to keep from going brown
3.      Melt peanut butter in put until super runny
4.      Drizzle peanut butter over apples
5.      Top with almonds, pecans, coconut, carob chips
6.      Drizzle small amount of peanut butter over toppings

Energy Bites

1 cup old fashioned oats
2/3 cup toasted coconut flakes
1/2 cup peanut butter
1/2 cup ground flax seed
1/2 cup semisweet chocolate chips (or vegan chocolate chips)
1/3 cup honey or agave nectar
1 Tbs chia seeds (optional)
1 teaspoon vanilla extract
Directions
1.      Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.*
2.      Once chilled, roll into balls of whatever size you would like. (Mine were about 1" in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
3.      Makes about 20-25 balls.

Vegan Tofu Sticks

1 block extra firm tofu
1/4 cup + 1 Tbsp marinara sauce
2 Tbs + 2 tsp nutritional yeast
Dried basil
Sliced olives
Directions
1.      Drain tofu: wrap block of tofu in paper towel. Place cutting board on top of the block of tofu. Apply even pressure to the top of the block by placing a cookbook (or something of equal weight) on top of the cutting board. Let tofu drain for about 15-20 minutes.
2.      While tofu is draining, preheat oven to 425F and line baking sheet with parchment paper.
3.      Cut tofu into 16 thin pieces, and place on baking sheet.
4.      Spread 1 tsp of marinara sauce on each pizza stick.
5.      Sprinkle 1/2 tsp of nutritional yeast on each stick.
6.      Sprinkle basil over the tofu sticks, to taste.
7.      Bake at 425F for 27-30 min.
